	3:00 to 7:00 p.m.	Registration check-in, Radisson Hotel lobby. Receive participant packets. 'History of Galloway in America,' book signing with author Patricia Pruitt. Art and photo displays.

Panelists: Sarah Bowman, WY (importance of genetics in meat production and obtaining quality-based prices from packing house) Loren Olson, IA (economics of producing grassfed in Rose Herd trials) Tom Wrchota, WI (direct marketing methods, importance of graze in grassfed production) Michael Caldwell, WI (benefits and negatives in production of organic beef) Homer and Diane Mohn, TX (finishing the grainfed steer, dealing with the slaughterhouse, packaging)
